Tomato Soup

My Favourite Tomato Soup

11969161_sThis soup is my absolute favourite. It’s creamy but low in calories and much lower in salt than shop bought / ready-made soup. It’s a wonderful winter warmer.


2 Cloves of garlic, crushed

1 onion, chopped

1 carrot, cut into small pieces

1½ teaspoons mixed herbs

1 vegetable stock cube made up to packet instructions

2 large cans of chopped tomatoes

100g low fat fromage frais

1 teaspoon sugar

Spray oil for frying

Pepper to taste

Fresh basil to serve

Preparation method

  1. Fry the garlic, onion and carrot for around 5 minutes
  2. Add the herbs, stock and tomatoes and bring to the boil
  3. Reduce the heat and simmer for around 25 minutes
  4. Add the pepper, fromage frais and sugar
  5. Liquidize to your preferred consistency
  6. Top with basil to serve
